Enchiladas and a casserole

BEEF ENCHILADAS

1 small can of olives
1 lb of hamburger meat
¾ can of Corn
10 small corn tortillas
1 can of enchilada sauce of your choice
½ bag of cheese

Cook the meat, add onions if you like or green chiles. Add in the corn and half can of the olives little bit of salt and pepper, drain and let stand to cool
Turn oven on 350
Take the tortillas and add the meat roll in your pan with a little of cheese, place them in row. Once completed take the can of sauce and pour completely over top add as much cheese as you like with olives going on last, cover with foil and place in oven for 30 min.

ENCHILADA CASSEROLE

4 chicken breasts cooked and shredded
1/2 package of corn tortillas torn into bit size pieces
2 cans of cream of chicken soup
1 can of water (the cream of chicken soup can)
1 can of chopped green chillies
1 or 2 cups of shredded cheese

Mix together until all the tortillas are covered and moist.....dump into 13x9 size pan pour one can of enchilada sauce (red or green) over the top and some cheese cover with foil cook until it starts to bubble about 45 mins at 350.
